Recipe of Mixed Veg and paneer Quesadillas

 Servings :Quesadillas

Ingredients:

  • 1 cup paneer (cottage cheese), grated or crumbled
  • 1/2 cup mixed vegetables (bell peppers, onions, mushrooms, zucchini, etc.), chopped
  • 2-3 cloves garlic, minced
  • 1/2 tsp cumin powder
  • 1/2 tsp coriander powder
  • 1/4 tsp red chili powder
  • Salt to taste
  • 4-6 whole wheat tortillas
  • 1 cup shredded cheese (mozzarella or cheddar)
  • 2 tbsp olive oil
  • Salsa and sour cream (optional)

Instructions:

  1. In a pan, heat 1 tbsp olive oil over medium heat. Add the minced garlic and sauté for a few seconds until fragrant.
  2. Now Add the chopped vegetables and sauté for 3-4 minutes until they are slightly soft.
  3. Add the grated or crumbled paneer, cumin powder, coriander powder, red chili powder, and salt. Mix well and cook for another 2-3 minutes until the paneer is slightly browned.
  4. Take the pan off the heat and set aside.
  5. Take a whole wheat tortilla and spread a tablespoon of olive oil on one side. Place the tortilla oil-side down on a flat pan over medium heat.
  6. Spread a layer of the vegetable-paneer mixture over one half of the tortilla.
  7. Sprinkle shredded cheese on top of the vegetable-paneer mixture.
  8. Fold the other half of the tortilla over the filling to form a half-moon shape.
  9. Cook the quesadilla for 2-3 minutes on each side until it is golden brown and crispy.
  10. Repeat the process with the remaining tortillas and filling.
  11. Cut each quesadilla into wedges and serve with salsa and sour cream (optional).
