Spinach and corn sandwich  is quite a popular sandwich in our home. I add fresh spinach and sweet corn and cook it in a cheesy sauce made by mixing wheat flour and milk . You can definitely add cheese or cheese slices if you prefer that . My kid doesn’t like the spinach but would happily gobble this up as the taste of spinach is not very evident in this sandwich. This sandwich is not only a great source of vitamins and minerals, but it is also an excellent way to introduce your children to new flavors and textures. Recipe of spinach and corn sandwich

Here is a simple recipe for a spinach and corn sandwich that kids might enjoy:

Prep Time: 5 minutes

Cook Time: 10 minutes

Ingredients:

  • 4 slices of bread
  • 1/2 cup of corn, boiled
  • 1 cup of fresh spinach leaves washed and finely chopped
    2 tsp WHEAT  Flour
  • 3/4 cup Milk
  • 1/2 tsp Black Pepper Powder
  • 1/2 tsp Salt
  • 1 tbsp Butter + extra for applying on the bread slices
  • 2 tsp Garlic Chopped
  • Salt and pepper to taste

Instructions:

  1. Heat  a pan, add butter, garlic and saute  for few minutes until nice aroma comes out.
  2. Now add boiled corn and cook for 5 to 6 minutes. Add chopped spinach and Cook the spinach in high flame till the water totally evaporates .
  3. Now remove this mixture and kept it separate bowl.
  4. Now in same pan add some butter , Wheat flour and mix well. Sauté it for 2 minutes. 
  5. Slowly start Adding  milk. Cook on slow flame until it becomes thick, keep stirring to avoid forming lumps .
  6. When the sauce turns very thick, add spinach-corn along with salt and pepper. Mix it well and switch off the flame
  7. Apply butter on the bread slices, place the filling in between the bread and grill or toast until crispy. Spinach corn sandwich is ready to serve
  8. Cut the sandwiches in half and serve.
