Eggless Banana and Millet Muffins

Ingredients:

  • 1cup wheat flour
  • 1/2 cup millet flour (I have taken ragi)
  • 1/2 cup brown sugar/ cane sugar/ jaggery powder
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup warm milk (dairy or plant-based)
  • 1/2 teaspoon lemon juice or vineger.
  • 1/2 cup vegetable oil or melted butter
  • 1/2 cup mashed ripe bananas (about 2 medium bananas)
  • 1 teaspoon vanilla extract
  • Chopped walnut and Choco chip

Instructions:

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a medium bowl, take milk and add lemon juice .Add brown sugar and Stir well so that sugar dissolves
  3. Add oil or butter, mashed bananas, and vanilla extract in this
  4. In another bowl Whisk together the wheat flour , millet flour, baking powder, baking soda, and salt.
  5. Add the wet ingredients to the dry ingredients and stir until just combined. Do not over mix.
  6. Scoop the batter into the muffin tin, filling each cup about 3/4 full.
  7. Add chopped walnuts and chocolate chips. Fold them in
  8. Bake for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  9. Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
